Origin: Finca Llaqtapata, Incahuasi, Peru Elevation: 2300 masl Variety: SL-09* Process: Dry Fermented Washed Dongze's notes: Jasmine, Citrus, Elderflower Another strong SL-09 to finish up this month - a Dry Fermented Washed SL-09 from Finca Llaqtapata by Gilber Huayllas Huaman, a winner of the 3rd place of the Cup of Excellence in Peru. SL-09 is an amazing varietal - it got some the florals like the Panama Gesha, the acidity like a Typica Mejorado, and also some of the fruitiness like a good old Ethiopian coffees. And combined with its killer pricing, it makes the green such a great foundation to work on - so producers can apply various layers of processing - like painting on a beautiful canvas. Located on the slopes of the Apu Choqesafra, Llaqtapata Farm has seven years of development and stands out for its volcanic soils rich in minerals and organic matter, factors that enhance the quality and complexity of its coffee. The proximity to the Choqesafra glacier creates a cold climate that slows fruit fermentation, allowing for sweeter and more balanced profiles. The farm belonged to Gilber’s father, who entrusted the land to him to continue the family’s coffee-growing legacy. Today, Gilber keeps that heritage alive, producing coffees that reflect effort, tradition, and deep connection to the land. If the last SL-09 release (Eudis Orosco) is a slightly fruity and sweet take on the coffee (coupling with my “Slow” roasting approach from my last post), this SL-09 got the potential to go “Ultrafast”. It has immense florals (jasmine, elderflower) in the cup, followed by citric acidity, and with a tea-like finish. Therefore, I’m taking this one to the extreme end of the spectrum.
