We wanted to create a coffee that showcases the vibrant, fruit-forward qualities of a modern specialty light roast, while capturing the comforting, nostalgic soul of a classic Italian espresso bar. It is so perfectly balanced that even our Italian staff members recognize a taste of home in the cup. The Craft: 50/50 Pre-Blended Roasting The secret to this blend lies in its composition and roasting approach. We combine 50% Kenyan and 50% Brazilian coffees as green beans before they enter the roaster. By applying a highly specialized, bespoke roast profile to this mixed batch, the beans integrate seamlessly. The result is a light roast that extracts beautifully, producing an incredibly rich, thick crema that is rarely seen in modern specialty light roasts.
