Berries and chocolate coming through early... let it flow fast. Gold Mountain does nice things, so expectations are high!Will it spro? I expect it to Turbo nicely.Roast Date: 5-7-26Roast Color: 126.8 (higher is lighter)As with other SWP coffees, the surface color appears darker than the roast level - this is actually the same profile as our Popayan EA with a slightly lower drop temp.Mixed varietals (Catuaí, Caturra, Caturra Estrella, Pacamara, Pacas, Pache, Yellow Bourbon) grown by Gold Mountain Coffee Growers Cooperative, processed at Finca Idealista in Jinotega. Carbonic Macerated Natural process, Swiss Water decaffeination, 1300-1600 masl.Sold in 100g bags.Brewmaster J's Notes and TipsS&W Jinotega Elixer Carbonic Maceration SWP Decaf Nicaragua I got berries and bakers chocolate out of this one. There’s a little bit of spice in there too but mostly berries and chocolate. It’s definitely on the darker side of S&W offerings like, the other SWP beans, but very dialable without being overly roasty. Like the other SWP decafs, I prefer this one as diluted soup with a recipe that pulls back on extraction while still getting those berry notes to come through. I wound up dropping the temp quite a bit and pulling the grind size up approaching fine pour over range. There’s definitely some funk in there but with the CM process that was very much expected. Overall this is another interesting decaf in the limited SWP series worth trying if you like non-traditional decafs.Grind 1.3.5 on XProTemp 85CBrewer OXO Rapid BrewerRecipe Soup 15/60g in, slow pump to saturate, full pump to get 45g out. The coffee was processed at Finca Idealista, nestled in the Northern Highlands of Nicaragua. These producers are working on building supply chains that support long-term financial stability for farming families. Their team works side by side with producers, offering shared resources, practical guidance, and quality support throughout the harvest. Data is collected daily from every farm, recording sugar content, photos of ripeness of cherries, and local weather conditions in order to produce unique lots at peak ripeness. With access to agronomists, ripeness specialists, and the milling and processing facilities at Finca Idealista, farmers have the tools to improve picking and processing decisions, raise cupping scores, and strengthen their ability to sell higher quality coffee at prices that help create lasting opportunity.Nicaragua Elixir is produced by a group of dedicate farmers including Maximino Palacios and Marlene Hernandez, Carlos Garcia, Juan Carlos Salgado and Aracely Montenegro, and Yesenia Salgado Lanzas, along with coffees from Gold Mountain's experimental farm, Finca Idealista, led by Benjamin Weiner. Processing takes place at Finca Idealista, where ongoing experimentation with carbonic maceration continues to shape standout cup profiles. This year's Elixir is fully carbonically macerated, double fermented, and dried in cherry, resulting in a syrupy cup with notes of wildberry jam and honey.Beyond the day-to-day work of farming and milling at Finca Idealista, Gold Mountain continues to invest in long-term community and environmental initiatives. Their projects include protecting a parcel of rainforest to support endangered plant and animal species, expanding farmers' access to credit, supplying running water to schools, and installing water catchment and filtration systems.
