Most Panamanian farms, due to heavy fog and high humidity, cannot dry the coffee down to 10–12% moisture content on site and must move it to lower-elevation drying yards or set up dark rooms for the final drying stage—thereby losing the complete expression of terroir. The Bambu plot at Los Lajones, favored by the warm and dry Pacific sea breezes, can complete the entire process on site—from picking and fermentation through drying to resting of the green beans. It is truly the crystallized expression of the estate’s soil, climate, and microbial communities. When tasting this washed Geisha, we should not only experience its aroma, acidity, sweetness, and texture, but also let our imagination take flight—to feel the Pacific sea breeze, the dappled light and shadow beneath dense foliage, and the invisible yet extraordinarily active microbial life in the air. All things are always interconnected. Let us quiet our minds and simply feel.
