MEXICO MAFAFAS TERRY'S CHOCOLATE ORANGE, ASSAM TEA, MISSION FIG + AMBER HONEY Fresh crop Mexico is here. Pulled from the highest-altitude plots near the town of Tepetlán, this is a delicious, comforting cup built on classic flavors. To us, it represents the very best of what Veracruz has to offer. This year’s harvest is cleaner than ever, with a classically rich profile: Terry’s chocolate orange, amber honey, Mission fig, and a hint of black raspberry. As is common throughout Veracruz, producers harvest the coffee as cherry before transporting it to the central processing plant in Coatepec, about two hours away. Most farms in Mafafas have road access, allowing coffee to be moved by car or truck rather than by mule. At the mill, the cherry is washed with spring water, fermented for 48 hours in concrete tanks, and then mechanically dried for 60 hours. The community is organized into small "ejidos," settlements of 30-50 people.
