- All of their coffee is processed in the same way at the wet mill. The cherries are first rested for 24 hours before being depulped, then dry fermented for another 30–36 hours. After washing, the coffee is dried in a greenhouse structure for 10–12 days.

- Processing begins with careful selection of fully ripe cherries. At the wet mill, any remaining underripe cherries are removed by hand before the lot is floated to eliminate defects and ensure only the densest fruit moves forward. The coffee is then depulped and placed into sealed plastic bags for anaerobic fermentation lasting approximately 76 hours. Each bag is fitted with a small tube to release CO₂ during fermentation, allowing for controlled development without excessive pressure buildup.
