Description
As we’ve talked about in the past, the color assigned to a honey processed coffee generally reflects the amount of mucilage left on during the drying stage- from white being the least, to black being the most. For this lot the cherries are rested for a day on raised beds to develop more sugars before pulping, leaving the most sticky sweetness behind.
