Dedicated exclusively to cultivating Typica Mejorada, Geisha, and Sydra varieties, this tiny farm yields an extremely limited production. We feel deeply privileged to feature his coffee this year. The term "Onda" (wave) refers to a continuous temperature wave cycle—moving from high to low temperatures using fermentation tanks and cooling units—designed to keep the coffee seed embryo alive during processing.
