Cette région, marquée par des saisons très contrastées, offre des conditions idéales pour une maturation lente et une grande complexité aromatique. Le café y pousse naturellement sous ombrage, principalement à l’abri des ensets (faux bananiers). Les cerises, issues de petits producteurs voisins, sont rigoureusement sélectionnées puis fermentées en anaérobie pendant 9 jours avant un séchage lent sur lits africains durant 13 à 18 jours. Le site, développé par Ephtah Specialty Coffee depuis 2023, s’inscrit dans une démarche durable et collaborative, avec un engagement fort auprès des producteurs et de la communauté locale, notamment à travers des programmes dédiés aux femmes et des initiatives sociales. Une fois stabilisé, le café est acheminé vers Addis-Abeba, puis transporté jusqu’au port de Djibouti avant son export vers notre torrèf. Récolte : décembre 2025 Un Éthiopien juteux, expressif et exotique de Gedeb. Fruit de la passion guidant la tasse, hibiscus, mûre, et un joli finish de rhum et tamarin. Envoûtant !
