Tasting notes: Jasmine, White Grape, Peach, Lemon Candy Lost Origin x Las Margaritas #258 is a washed Gesha from Finca Las Margaritas in Panama’s Chiriquí highlands. Grown at 1,300 metres by the Navarro family, this lot was developed in collaboration with Lost Origin Coffee Lab and Thibaut Paggen, EVEN’s Director of Coffee. Unlike the other Las Margaritas lots, #258 uses a short, cool fermentation designed to preserve the coffee’s inherent varietal and terroir characteristics rather than introduce additional fermentation-driven flavours. The cherries were depulped and fermented for one day at 15.1°C with LOY-014 before being dried for 17 days in Lost Origin’s controlled drying rooms. With minimal microbial activity during fermentation, the coffee retains the delicate aromatic character of the Gesha variety and its natural acidity. In the cup, jasmine leads the way, followed by crisp white grape and juicy peach. A sweet, balanced finish recalls lemon candy, giving the coffee a clean and precise expression of Las Margaritas Gesha.
