This farm is run and managed by Marián Takáč and his family who happen to be some of the most genuine and thoughtful coffee people we’ve ever met. They’ve invested the time, effort, and resources in order to elevate the specialty coffee production of their area by partnering with the local communities and incentivizing the production of specialty coffee as well as investing in the necessary equipment in order to properly sort, process, and dry coffee to an incredibly high standard. Their hardwork and dedication have been rewarded as Zanya coffees have been scoring 85-86 points every year for the past 3 years, confirmed by an independent SCA laboratory. Check out our YouTube video where we visited the farm in person!    This is our very first co-ferment lot. We were waiting a long time before featuring one because we wanted our very first co-ferment to be clean and well-integrated, without one note ever dominating the cup profile. Zanya lavender delivers and then some! This is our most favorite Zanya lot to date (and this is coming from a team of washed coffee lovers) because of how well-executed this lot is. Expect flavors of key lime, lavender, and cinnamon. Inspired by local diversity, Zanya sourced lavender that grows naturally in the Dalat area. By using flora from Dalat, we think they are also able to honor their terroir in a unique and creative way with their coffee. This coffee goes through a 100 hour co-fermentation with dried lavender flowers. Zanya wanted to “combine the gentle floral qualities of lavender with the natural taste of the coffee to create something special, without losing the coffee’s identity,” and they did a fantastic job in doing so.
