A young producer to watch At just 22 years old, Marlon Bolaños is already demonstrating a remarkable understanding of his coffee. What particularly strikes us about his approach is not the pursuit of ever more complex processes. It is rather his ability to understand when to intervene… and when to let the coffee speak. We were fortunate enough to spend time with Marlon and discover his work up close. This meeting only strengthened our conviction: his name is one to remember. Being able to present his Gesha today, while he is still at the beginning of his journey, makes this discovery even more special for us. Simplicity as a form of precision For this Gesha, Marlon deliberately favors a streamlined approach. The cherries are first harvested and selected by density before beginning an initial fermentation of two days in cherry. After depulping, the coffee continues its fermentation for two additional days under controlled conditions. This double fermentation is not intended to transform the character of the coffee. It seeks instead to amplify what is already naturally present: its sweetness, its florality, and the elegance inherent to Gesha. A pure expression of Gesha No need for gimmicks here. Jasmine, rose, and the sweetness of sugar cane create a precise and harmonious cup. The process accompanies the variety rather than taking center stage. That is exactly what makes this coffee interesting: behind its delicacy hides an already very assertive vision.
