Coffee Info: We Taste: Vanilla, Floral, White Peach Process: Lychee + Niche Washed Varietal: Selection 10 MASL: 1200 Producer: Ajoy and Pranoy Thipaiah From our pals at Osito: Kerehaklu’s standard process is as follows: Freshly harvested cherry arrives in the evening and are given one last round of hand sorting before being floated in a tank the same day. The water is then drained from the tank, and the coffee sits in the tank under shade overnight. The following morning, the coffee is de-pulped, transferred to plastic barrels, and fermented for roughly 24 hours; this step can be done with water, with the addition of mosto, or dry. This is the biggest area of variation in Pranoy’s processing. The coffee is then put through a mechanical washer and then dried. For this specific Selection 10 variety, a 20 L starter culture was prepared using lychee and soil. The coffee fermentation was inoculated with this starter after being pulped and when it was put into barrels.
