The farm sits at approximately 1,500 masl and spans 10 hectares, with 7 hectares dedicated to coffee and around 27,000 trees in production. Of those trees, roughly 9,000 are Pink Bourbon, alongside Variedad Colombia, Castillo, and a small planting of Geisha. This lot is composed entirely of Pink Bourbon. Processing begins with careful selection of fully ripe cherries. At the wet mill, any remaining underripe cherries are removed by hand before the lot is floated to eliminate defects and ensure only the densest fruit moves forward. The coffee is then depulped and placed into sealed plastic bags for anaerobic fermentation lasting approximately 76 hours. Each bag is fitted with a small tube to release CO₂ during fermentation, allowing for controlled development without excessive pressure buildup. After fermentation, the coffee is fully washed and dried slowly in a greenhouse over 18–20 days, preserving clarity while building depth and sweetness. Lizardo’s dedication to quality reflects a broader family ethos of hard work and innovation. In addition to coffee, he and his brothers also operate commercial avocado farms in the region, helping drive agricultural development locally.
