Tastes Like: Strawberry, Yellow Nectarine, Hibiscus Origin: Lot Falda, Elida Estate, Chiriqui, Panama Variety: Gesha Producer: Wilford Lamastus Elevation: 1,800 masl Process:  Natural, Anaerobic Slow Dry (ASD), Two-Day Reactor Fermentation (RF2D) + Dark Room Drying (DRD) Elida Estate, Lot Falda Elida Estate is the Lamastus family’s farm in Alto Quiel, Boquete, in Panama’s Chiriquí highlands. The family has owned the estate since 1918, and Wilford Lamastus is the producer for this Falda selection. Falda is listed at 1,800 masl. Elida’s coffee grows in volcanic soils with native shade trees and surrounding cloud forest. Cool nights and frequent mist contribute to a slow ripening cycle. Variety Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. Panamanian Gesha is valued for its cup quality at high elevations and its potential for floral and stone-fruit aromatics. Growing conditions, processing, and roasting shape how those qualities appear in each lot. Processing Harvested on March 5, this Falda lot spent two days fermenting in a sealed tank before the whole cherries were slowly dried in a dark room. The cup brings together strawberry sweetness, yellow nectarine, and the floral brightness of hibiscus.
