These growers cultivate coffee at approximately 2,173 meters above sea level, primarily planting the local 74158 and 74112 varieties. The station brings their cherries together for sorting, pulping, fermentation, and drying. Variety 74158 is an Ethiopian Arabica selection developed from the country's coffee genetic resources as part of work on resistance to coffee berry disease. It is one of the two varieties reported for this Chelbesa lot. 74112 is a separate Ethiopian Arabica selection from the same wider disease-resistance research effort. These named varieties provide more specific planting information than the broad label “landrace”; their cup expression also depends on the growing site and processing. Processing Cherries are sorted by flotation before eco-pulping removes their skins. The parchment coffee ferments for two to three days to loosen the mucilage, then soaks for 12 hours. Drying takes seven to ten days on raised beds, followed by another sorting stage before dry milling. Washed processing can emphasize clarity and definition in the cup, with the final result also shaped by growing conditions, drying, and roasting.
