Description

Tastes Like: Jasmine, Strawberry, Red Florals Origin: Bosque lot, Jaramillo Farm, Hacienda La Esmeralda, Boquete, Chiriquí, Panama Variety: Gesha Producer: The Peterson Family Elevation: 1,700+ masl Process:  Natural with Cold-Room Anaerobic Fermentation and Climate-Controlled Drying (BANC) Farm / Producer Hacienda La Esmeralda is the Peterson family's coffee estate in Boquete, Panama. The family expanded into coffee production in the 1980s and purchased Jaramillo Farm in 1997. A Gesha lot from Jaramillo won the 2004 Best of Panama competition, helping bring international attention to the variety. Bosque 3 BANC comes from the Bosque lot at Jaramillo, above 1,700 meters. The lot has 2.1 hectares in production, with coffee trees averaging 15 years old. Jaramillo's cool, humid mountain conditions, established shade trees, and steep slopes shape the setting in which this coffee grows. Variety Gesha, also spelled Geisha, traces its origins to Ethiopia and has become closely associated with Panama's specialty coffee. At high elevations, it can develop delicate floral and stone-fruit aromatics. Jaramillo is an important part of that history, where the Peterson family's separation of individual lots helped reveal the variety's distinctive character. Processing Harvested on January 19, 2026, the cherries spent two days pre-drying outdoors on raised beds before four days of fermentation in a sealed stainless-steel tank inside a cold room. They then dried for 41 days in a climate-controlled room with regulated temperature, humidity, and airflow, completing the natural process as whole cherries.
