This is a ferment-forward anaerobic microlot with tons of tart red fruit impressions in the cup—think pomegranate or cherry.Lộc Rừng ("Nature's Gift") is a small quality-minded operation located in the Đưng K’nớ region. Standing at 1,500 meters above sea level, the area is well suited to arabica production. Managed by Kate (Nguyễn Mỹ Duyên) and Leo (Nguyen Thanh Long), the Lộc Rừng team consists only of 4-5 mill and green house workers along with a rotation of local pickers.Processing-wise, the cherries went through an extended 192-hr anoxic (low oxygen) fermentation in water before a 15-20 day raised bed drying. The cooler climate of the higher elevation, combined with the lower temp submersion, ensured a gentler fermentation.
