Description
A Rare Coffee Heritage – El Salvador Bourbon Elite Washed The Bourbon Elite variety, planted over 100 years ago by Diego Baraona’s forefathers, is a testament to resilience and tradition. This coffee represents the unique history of El Salvador’s coffee industry, offering unparalleled sweetness and a clean, crisp flavor. A Legacy of Resilience: Planted over a century ago, these original Bourbon Elite trees are a direct mutation of Typica. While many farms replaced them due to rust challenges, Diego Baraona has preserved them to protect his family's heritage. Exceptional Usulután Terroir: Cultivated at 1,450 MASL in the rich soils of Usulután, El Salvador, this variety is renowned for an unparalleled toffee-like sweetness balanced by a light, apple-like acidity. Innovative Mechanical Washing: This lot undergoes a meticulous washing process using a mechanical demucilager, which uses centrifugal force instead of traditional fermentation to remove the mucilage, yielding an incredibly clean cup. The Story of Bourbon Elite After the specialized washing process, the beans are slowly dried on raised beds for 10–14 days and rested in hermetically sealed bags for three months. This careful handling results in a clean, consistent flavor profile that highlights a rich, buttery body and pays true homage to its historic Central American origins. Inside Los Pirineos: Preserving a Century-Old Legacy Discover how Diego Baraona bridges traditional heritage with innovative, low-impact mechanical washing. Read the Story ➔ Roaster's Notes To maximize the innate sweetness and highlight the clean flavor of the Bourbon Elite variety, this lot undergoes a precise roasting process at our facility in Hannover. ➔ Roast Profile: Light-Medium Roast • 2/5 on our development scale to balance sweetness and acidity. ➔ Versatile Preparation: Meticulously profiles so you can enjoy it beautifully as both a bright filter cup and a well-balanced espresso without compromises. Ethical & Sustainable Ecosystem Diego Baraona’s farm beautifully integrates long-term historic preservation with sustainable modern processing techniques. A renewed focus on agroforestry has transformed the farm from chemical dependent to ecological pioneers. The coffee is meticulously hand-sorted and packed on-site to maintain absolute quality parameters.
