Origin: Metapan, Santa Ana, El Salvador Farm: La Encantada Producer: Figueroa Sandoval siblings Altitude: 1,850 m Variety: Pacamara, Gesha, Bourbon Process: Washed Notes: Raisin, Hazelnut, Himalaya Gold Tea Recommended brew method: Filter The Figueroa Sandoval siblings established the Enrique Figueroa Foundation in 2003, committed to protecting, nourishing, and promoting vulnerable areas in the mountains of Metapan, El Salvador. They purchased land close to the Montecristo National Park, where they found an area with coffee plants - the La Encantada biological reserve. Their efforts in nature preservation has protected coffee plants and other native flora and fauna, including pines, oaks, salamanders, quetzals, great curassows, spotted felines and many more. This lot is a blend of Pacamara, Gesha, and Bourbon, harvested at La Encantada and processed by CaféNor, a carbon neutral mill founded by Alejandro Valiente. At CaféNor, the mills are powered by renewable solar energy and they have a water treatment system to minimize waste. CaféNor supports around 65 neighboring smallholder producers with 1 to 3 hectare farms by providing them with processing infrastructure, as well as investing in educating producers by passing on the knowledge of permaculture to conserve natural resources, and by introducing telecommunication technology to improve communications amongst producers for better transparency and traceability of their coffee. The result of this collaboration focused on nature preservation is a beautiful coffee with sweet notes of raisin, nutty tones of hazelnut, with calming notes of black tea - like the elegant Himalaya Gold Tea.
