Tasting notes:  Dried Fruits, Green Apple, Fudge El Ingenio is a washed coffee from the Urrutia family’s estate in the Apaneca Ilamatepec region of El Salvador, grown at 1,200–1,600 metres. A blend of Bourbon, Pacas, and San Pacho varieties, the cherries are carefully sorted and depulped before a 13–14-hour dry fermentation, washing, and wet fermentation. The cup is smooth and rounded, with flavours of dried fruit, crisp green apple, and rich fudge. Thoughtful processing and careful cherry selection create a balanced coffee with a satisfying sweetness and clean finish.
