Tasting notes: Dried Fruit, Milk Chocolate, Red BerryAlex Aguilar grows this field blend at Finca Los Angeles in Las Vegas, Santa Bárbara, Honduras, at about 1,545 metres. He inherited the farm and learned coffee production from his father; his family works together on picking, processing and drying. The lot combines IHCAFE 90, Pacas and Bourbon. Ripe cherries are handpicked, sorted, floated and depulped the same afternoon. After 12 to 18 hours of fermentation, the coffee is washed and dried on African beds. The resulting batch brew is sweet and approachable, with dried fruit, milk chocolate and red berry notes.
