Passion for Coffee Quality Daybreak is a product of months worth of preparation. It is a result of our on-the-ground experience visiting coffee farms and understanding how the coffees we source are grown and processed so that we can roast them better. We travelled to Vietnam in order to form friendships and partnerships with some excellent coffee people producing the best coffee that they can. We also spent a long time trying to find excellent local producing partners and did dozens of sample roasts in order to find and select the right lots that will go into this blend. Finally, we travelled to Taiwan in order to test out and purchase our new production roaster that is the most suitable for our roasting style. Taking Care of the Details We designed our roasting operation for maximum quality and consistency with our roasts. We make use of a combination of finely tuned human sensory skills aided with advanced roast software in order to ensure our roasts are well-controlled and go as planned. We also continuously color track and cup our roasts to ensure a high level of taste and consistency in the cup. Ambition: Making specialty coffee more accessible We think Daybreak is the New Standard and ought to be found in hoppers in cafes and homes all over the Philippines.
