Notes Plum, Custard, Cinnamon Origin San Marcos Huista, Huehuetenango, Guatemala Elevation 1550 MASL Variety Caturra Process Washed This coffee comes to us from Ana Nolasco Pascual, who owns and operates her farm Yalanchen outside the community of San Marcos Huista in Huehuetenango. This is our final release from Guatemala for the season, but we are glad to go out on a high note with such a juicy and balanced lot of 100% Caturra. We taste notes of red stone fruits and warm baking spices with a creamy, dessert-like sweetness. Ana has her own small wet mill at home and processes all of her coffee herself, with help from her husband and children. This lot started with ripe coffee fruit that was depulped and dry fermented before being washed thoroughly and dried in the sun for 3-4 days. Additionally, Ana is part of the cooperative El Sendero which provides support and education to producers in this area and operates its own receiving warehouse in order to make it easier for its members to reach the market with their high quality coffees.
