This was one of the first coffees we ever profiled for a light roast, almost five years ago — and it's back after three years away. As a honey process, the cherries are pulped and then slowly sun-dried on raised beds over 15 days, keeping the cup clean and sweet. Expect sweet lime, jaggery, and light florals — floral, citrusy, and clean. A light roast designed primarily for filter brewing, with an elegant finish. Best for expressive pour overs, bright espressos, and small fruity milk drinks.
