The third-generation Patre family understands the distinctive character that Indian terroir and varieties can bring to specialty coffee, and has developed processing methods designed to draw out something truly unique and exceptional. The processing phase involves 48 hours of anaerobic fermentation in specialized biofermenters,  enriched with terroir-specific microorganisms. For this lot, Mr. Ashok and his team developed a distinctive protocol by isolating indigenous microbes from leaf litter collected on the estate, cultivating them to represent its unique biological profile. The resulting parchment then undergoes a 29-day honey process on raised drying beds.
