Description
An anaerobic-washed Pink Bourbon from Las Flores, Colombia. We love working with Jhoan’s coffees, they’re always remarkably expressive. This lot shines with notes of lemongrass, white florals, and crisp green apple, delivering a sparkling, bright cup. Fermentation Process: 1. 36 hours of anaerobic fermentation in cherry. 2. 12 hours of oxidation. 3. 36 hours of anaerobic fermentation after pulping. - Leachate Recirculation: No - Thermal Shock: Yes - Shock Temperature: 50 °C (122 °F) - Shock Duration: 30 minutes - Mechanical Drying Time: 36 hours
