We love working with Jhoan’s coffees, they’re always remarkably expressive. This lot shines with notes of lemongrass, white florals, and crisp green apple, delivering a sparkling, bright cup. Fermentation Process: 1. 36 hours of anaerobic fermentation in cherry. 2. 12 hours of oxidation. 3. 36 hours of anaerobic fermentation after pulping. - Leachate Recirculation: No - Thermal Shock: Yes - Shock Temperature: 50 °C (122 °F) - Shock Duration: 30 minutes - Mechanical Drying Time: 36 hours
