Tasting Notes: Berry Compote, White Sugar, Strawberry Juice. Produced by Ture Waji at Sookoo Coffee in Guji, Ethiopia, this anaerobic natural-processed lot is grown at 2,173 meters. Cherries undergo a carefully controlled fermentation process before being dried on raised beds to enhance their sweetness and complexity. The result is a vibrant and juicy cup with rich notes of berry compote, strawberry juice, and a delicate white sugar finish.
