Description
Origin: Brazil Region: Campos Altos, Minas Gerais Farm: Fazenda Olhos D'Água Producer: Flávio Márcio Ferreira Da Silva Altitude: 1200 masl Variety: Arara* Lot: 2025 COE Experimental #4 (4th Place, 2025 Brazil Cup of Excellence Experimental Category) Crop: Picked in Sep. 2025 / Arrived in May. 2026 Process: Natural About farm: The producer is a second-generation coffee farmer who grew up on the coffee farm. After his father passed away, he continued the family business alongside his siblings. They manage the farm sustainably, and together with their team, tend meticulously to every coffee lot. This coffee earned 4th place in the Experimental Processing Category of the 2025 Brazil Cup of Excellence, scoring 89.89 points at cupping. It features the Arara variety, a natural hybrid of Yellow Catuai and Obatã, celebrated for abundant sweetness, clean and consistent flavour profile. Though entered in the Experimental category, this coffee uses natural processing as its foundation with highly refined fermentation control. After harvesting fully ripe cherries, the coffee undergoes 24 hours of resting fermentation, followed by 48 hours of temperature-controlled fermentation in stainless steel tanks. It is then dried in thick layers under sunlight and rested for maturation. The precise processing technique fully unlocks the sweetness and complexity of the Arara variety, enabling this coffee to stand out in Brazil’s most prestigious coffee competition.
