Description

Starlight is the one that tastes like where it came from. A single origin rather than a blend, currently Ethiopia Duromina Washing Station, washed, with florals, stonefruit, and crisp citrus running the whole way through. We roast it light-medium, modern rather than traditional, which keeps the origin character intact instead of burying it under development. That means it wants a longer ratio than you're probably used to. We pull it at 1:2.5. Open it up and it comes alive, juicy and bright with real clarity, where a tight ristretto shot just chokes it. Same idea on filter, give it room. On our bar: 18g in, 43-45g out, 93°C, landing around 23-28 seconds. Water at 70ppm. Your grinder, water, and machine will move this. Start here, then adjust to taste.
