Description

Producer: Faver Ninco Location: Santa Maria - Huila, Colombia Variety: Papayo Process: Semi-Washed, Yeast-Inoculated  Harvest: 2026 Farm Altitude: 2005m Importer: The Coffee Quest Contract Price: $8.10 per pound Semi-washed (Honey) Coffees: Honey process coffees exist on a wide spectrum between washed and natural and have different names in different countries such as pulped-natural, semi-washed, and honey. Within honey process, there are also distinctions between white, yellow, red, and black honey, respective to increasing amounts of mucilage left on the coffee during drying, and reflecting resulting bean.  Yeast-inoculation: YI is a secondary process that modifies the fermentation step. Wild yeasts are usually present during this step, but in this case producers introduce specific strains of yeast to the fermenting coffee to control flavor, sweetness, or mouthfeel. In our experience we've noticed it adds a lovely silkiness to the body of the coffee.
