Our second release from Ratnagiri! This lot comes from a century-old South Indian estate that's becoming noted within the specialty scene. Founded in the 1920's, Ratnagiri is run by third-generation family owner Ashok Patre.Versed in experimental processing methods, Ashok began producing sealed anaerobic fermentation lots using stainless steel tanks in 2019. Since then, he has experimented with the many ways anaerobic processing can take place. This lot is no exception to that trend. Cherries are fermented in a biofermenter for 48 hours with LalCafé Intenso microbes. They are then vacuum-shocked before going through drying on raised beds for 24 days.For a process-intensive anaerobic, this coffee actually shows a certain tact in the cup. Yes, the berry impressions we associate with regular and anaerobic naturals are there. But the coffee doesn’t overwhelm the palate with acidity that at times verge on vinegary the way some Colombian anaerobics could. Instead, the dominant impressions are its floral quality and creamy cotton candy-like sweetness. Overall, an experimental lot that deftly balances playfulness and restrain.
