A classic, crystalline expression of Panama Geisha from El Salto — the high valley on the slopes of Volcán Barú that has become one of Boquete's most closely watched Geisha districts. Grown by the Suárez family, who have farmed coffee in El Salto since 1948, this washed lot shows the variety exactly as it was meant to be tasted: jasmine and white florals, ripe stone fruit, bright bergamot citrus, and a silky, tea-like finish. Jasmine and orange blossom lead the aroma, opening into white peach and apricot sweetness with a bright, bergamot-lemon acidity. The body is delicate and silky, and the finish is long and clean, with cane sugar and black tea. The cup keeps changing as it cools, and more citrus and honeyed florals come forward. El Salto — Boquete's Geisha Heartland El Salto sits high in the Boquete district, near the top of Volcán Barú, Panama's tallest mountain. Days here are cool (13–22°C), clouds come and go, and the volcanic soils are rich in minerals. These are the same conditions that made Boquete famous for Geisha. The valley is home to some of Panama's most celebrated producers. In recent years, El Salto lots have placed near the top of the Best of Panama Geisha Washed category, and the neighborhood has become known for the clean, floral, tea-like washed Geishas that define the variety. Three Generations in El Salto The Suárez family's coffee story in Boquete began more than a century ago. In 1948, Vidal Suárez and his wife Eira Gutiérrez de Suárez started a new generation of growers in El Salto. They worked the land by hand, and their first plantation, Camiseta, was planted with Typica. As it came into full production, they bought neighboring land and grew to become one of the five largest coffee producers in the area. Today, two of their six children, Carlos and Laura Suárez, carry on the family tradition under the El Salto Premium Coffee name. They farm three estates: Camiseta, Los Limones, and Doña Eira. Alongside Typica, Yellow Catuaí and Laurina, the family now grows Geisha on these high-altitude slopes. Washed — The Benchmark for Geisha For Geisha, washed processing is the traditional benchmark. Ripe cherries are hand-picked, pulped, fermented to remove the mucilage, washed clean, and then slowly sun-dried on raised beds until the moisture is stable. This keeps processing flavors out of the way, so the variety's floral aromatics, refined acidity and tea-like clarity come through, along with the character of the land it grew on. It's a cleaner, more transparent counterpart to our anaerobic and natural Geishas, and the best way to taste what Panama Geisha is at its core. Brewing Recommendation We recommend a pour-over (V60, Origami or Kalita Wave) to bring out the jasmine aromatics and stone fruit clarity. Brew at 200–205°F with a medium-fine grind, and serve in a tulip-shaped cup or wine glass. Let the coffee cool as you drink; the citrus and honeyed florals become more pronounced as the temperature drops.
