The 74158 cherries undergo a 96-hour anaerobic natural fermentation. Elto's work focuses on carefully selected nano-lots that highlight Bensa's terroirs through precise, innovative processing. The extended fermentation builds intensity while keeping the cup defined. Juicy blueberry, blackberry, and black cherry create a jammy fruit character, then Earl Grey and floral notes emerge as the coffee cools. Tanat scores the lot at 88 and roasts it for filter brewing.
