Tasting notes: Pear, Honey Candy, Cocoa Honduras – Jesus Galeas is an expressive anaerobic washed coffee from La Falda farm in Selguapa, Comayagua, produced by Jesús “Chungo” Galeas at 1,700 metres. Made from Typica, this coffee combines the clarity of a washed process with the added depth and complexity of anaerobic fermentation. The cup is clean and balanced, bringing together ripe pear, sweet honey candy, and cocoa for a smooth and approachable profile. Beyond the quality of the coffee itself, Jesús is an important force in the development of specialty coffee in his community. After seven years working with the Honduran Coffee Institute (IHCAFE), where he trained producers in soil analysis, harvesting, and processing, he returned to Selguapa with a goal of helping more farmers enter the specialty market. In 2018, his efforts, alongside the support of Rony Game, helped the number of specialty coffee producers in his hometown grow from just two to 30 in a single year. His work reflects a commitment to better farming practices, stronger producer communities, and a more sustainable future for Honduran coffee.
