Origin: Colombia Region: Planadas, Tolima, Colombia Farmer: Jorge Elias Rojas Vásquez Farm: Finca La Roca Varietal: Gesha Processing: 48h Washed Elevation: 1850 masl Profile: Meyer lemon, sweet clementine, warm florals Price per lb (shipping + greens): $24 About the farmer: Jorge Rojas was born in 1988 in Planadas, Tolima. He was twelve when his father died, and he began working the family farm alongside his mother. He left school after third grade and has worked in coffee since. Rojas joined ASOPEP Planadas early on, drawn by the association's focus on quality. He has farmed using ecological methods from the start, and holds organic certification through ASOPEP alongside roughly 300 other member farms. About the coffee: Cherry was floated to remove defects and pulped the same day. The coffee then fermented in its own mucilage for 48 hours — dry, no water added — before being fully washed. Jorge chose the washed route here to let the variety itself come forward. Drying happened in a covered marquesina under polisombra, a black shade netting stretched over the plastic roof to slow moisture loss. Rather than drying continuously, he rested the coffee for 24 hours at days 5, 9, and 13, stretching the full cycle to 15 days. The slower curve preserves aromatics and fruit character. Roaster's notes: Clean and fruit-forward gesha. I've been turning to this one when I want something more delicate and bright. It has strong hints of lemon, tangering, and white florals.   Brewing Notes: V60 Water temp: 90-93C Brew recipe: 0. 18g grounds a tad coarser 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (until water drains) 3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides   Rest notes: I'd leave it alone for 3+ weeks if possible.  Additional Notes: Learn more about how we price our coffee here.
