Description
Origin: Panama Region: Volcán, Chiriquí Farm: Finca Deborah Farmer: Jamison Savage Varietal: Green Tip Gesha Processing: CM Washed Elevation: 1800 masl Profile: lilacs, tangerine, thin body with subtle florality Price per lb (shipping + greens): $39.89 About the coffee: Cherries are hand-selected cherries at peak ripeness. The fruit is removed and the beans are sealed in tanks filled with circulating carbon dioxide, where temperature and pH are closely watched throughout fermentation. Once that's complete, the beans are dried on shaded raised beds, then rested in airtight bags for 60–90 days to develop their aromatic complexity. A final round of hulling and sorting ensures only the best make it into the bag. Roaster's notes: This is last year's harvest. We just never got to release it until now. The entire stock is stored in our little chest freezer in my living room. But man, last year's harvest is miles better than the prior years', or maybe I got better at roasting 🥲, but this lot is much more expressive. Brewing Notes: V60. Water temp: 95C+ Brew recipe: 0. 18g grounds 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits 3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer. Honestly though, you can push with this one. Feel free to go finer or use more pours. Rest notes: 4 weeks+.
