After selective hand-picking, the cherries are sealed in anaerobic tanks with unrefined sugar (gud in the local tongue) for 26 hours, encouraging a slow, sweet fermentation. They’re then sun-dried for 22 days, allowing sugars to deepen and flavors to develop naturally over time. In the cup, you’ll find notes of sweet lime, brown sugar, and berries giving a smooth and sweet profile.
