Description

For the fourth year, we are offering three microlots from Gamaliel Ríos Ortíz, Mexico. All three feature the Peñasco variety processed as a washed, honey, and natural. Tasting notes: Strawberry, Sweet Corn, and starfruit Elevation: 1500 m Variety: Peñasco Process: Natural Region: La Concordia, Chiapas Grown by third-generation coffee producer Gamaliel Rios Ortiz in the lush landscapes of the Sierra Madre in Chiapas, Mexico, this exceptional coffee embodies a legacy of craftsmanship and dedication. Gamaliel’s farm, Castaño, is nestled between 1,400–1,700 meters above sea level in the township of Plan de la Libertad Alta, where the high altitudes and fertile soils produce vibrant and complex coffees. This lot showcases the Peñasco variety and features a father. This lot is composed of the Peñasco variety and is processed as a natural coffee. Only fully ripe cherries are selectively harvested before undergoing an extended 110-hour whole-cherry fermentation. The coffee is then carefully dried for approximately 17 days on raised beds, locally known as zarandas, allowing the fruit to dry slowly and evenly. By leaving the beans inside the whole cherry throughout drying, the natural process encourages greater interaction between the seed and the fruit, resulting in a cup with enhanced sweetness, body, and fruit complexity.
