ETHIOPIA KOKE RED HONEY - ANAEROBIC HONEY RED BERRIES, JUICY ROSE, CRANBERRY RED CHERRY + LILAC This is a deliciously winey and juicy cup filled to the brim with tart red fruits and winey goodness.  We're loving this process, which basically amounts to an Anaerobic Honey process.  The yielding cup is dense with flavor, without going over the top.  We're tasting juicy natural rosé wine, red berries, red cherry, cranberry, and hints of lilac.  Super small lot for us so act accordingly.  BEAN DETAILS: ORIGIN: Gedeo, Yirgacheffe, Ethiopia PRODUCER: 400 smallholder producers ELEVATION: 2,000 masl PROCESS: Anaerobic Honey TASTING NOTES:  Juicy rose wine, red berries, red cherry, cranberry and hints of lilac.  ROAST TYPE: Light Farm Level The Koke Red Honey comes from the Konga Washing Station, located in the Gedeo zone of Yirgacheffe, Ethiopia. The station sits at 2,000 MASL, where more than 400 smallholder producers contribute from across the kebeles of Koke, Konga, Udessaa, and Birbirsa Kala. This lot is comprised of the mixed heirloom varieties Kudhume and Dega. The Red Honey process begins with rigorous selection: only cherries scoring >20° Brix on a refractometer are chosen, floated, and sorted. These cherries undergo 24 hours of aerobic fermentation followed by 24 hours of anaerobic fermentation, then are depulped and dried with mucilage on shaded raised beds for 15 days, depending on the weather.
