The farm sits at elevations between 1,670 and 2,000 meters above sea level. Hacienda Lugmapata has consistently been recognized at Ecuador’s Taza Dorada coffee competition, and its coffees were first introduced to Korea through MOMOS COFFEE. Over the years, we have continued to return to the farm, observing everything from the condition of the coffee trees to small changes in its processing facilities. Through these repeated visits and the trust built over time, our relationship has grown to the point where the farm now produces custom lots specifically for MOMOS. At Lugmapata, careful attention is given to every stage of coffee production, from plant genetics and cultivation to harvesting and post-harvest processing. Sidra and Typica Mejorada are among the farm’s principal varieties, alongside Geisha, Ethiopian Typica, and Pacamara. This close attention to the land, varieties, and processing continues to shape the distinctive coffees of Hacienda Lugmapata. In the past, Lugmapata processed cherries harvested over several days together, which often resulted in subtle differences from one cherry to another. MOMOS suggested a small change: “Process the cherries on the same day they are harvested, while they are at their freshest.” The farm embraced this approach, and the coffee began to show greater clarity and consistency. This lot is a washed Sidra. After harvest, the cherries are fermented for up to one day before being depulped and washed. They are then slowly dried for approximately 14–21 days until reaching a moisture content of 11%. This careful process brings greater definition and consistency to Sidra’s delicate sweetness and clean acidity, allowing the character of the variety to come through clearly in the cup."
