The Story Peñas Blancas isn't a classic farm - it's a centralized processing center in Acevedo, in Colombia's Huila region. It was founded and is run by producers Nestor Lasso and Jhoan Vergara, who set out to build a shared space where smaller producers could reach advanced processing methods and the quality the specialty market demands. The center keeps developing the sector in the region: it supports producers, pushes for transparency in trade, and backs community projects. Peñas Blancas works above all as a social initiative . For farmers who might otherwise lack access to modern infrastructure, technical guidance or stable routes to market, it offers equal access to high‍-‍quality processing and fair payment for delivered coffee . Processing under expert supervision helps every lot reach specialty grade, which helps producers get better prices and steadier long‍-‍term income. Nestor Lasso is a young producer from Huila who focuses on experimental processing - more precise fermentation and quality control. His work has helped build the center's reputation as a place focused on clarity and consistent micro‍-‍lot quality . Jhoan Vergara brings experience in farm management and post‍-‍harvest work to the project. His focus is on supporting local farmers, fair trade relationships and producer education - and on raising the profile of Acevedo's coffee internationally. The center is built on collaboration, education and sustainability . It's a place where producers, agronomists and people from the coffee industry meet and share knowledge - through training and workshops on post‍-‍harvest processing, fermentation and quality control. Because coffee is the main source of income for many families in Acevedo, direct trade relationships and transparent pricing help reduce economic uncertainty and let farmers reinvest in their own farms. Peñas Blancas pairs quality with environmental care - working with farmers on washed, honey and anaerobic processing, lowering water use and using solar drying . How is the coffee processed? Harvest - the coffee cherries are picked and transported to the Peñas Blancas processing center in Acevedo. Washed processing - the cherries are depulped, and the beans undergo fermentation to break down the remaining sweet mucilage around the parchment; it is then rinsed away with clean water. Drying - the coffee is dried using the center's solar‍-‍drying innovations, which also help reduce water consumption. Variety This harvest is the Ombligon variety , closely associated with Colombia's Huila region and the Lasso and Vergara families. It was long thought to be a local mutation of Bourbon or Caturra, but genetic testing suggests that it is closely related to Ethiopian landrace varieties . It gained global recognition in 2022, when Anthony Douglas used it to win the World Barista Championship. Its name comes from the Spanish word ombligo , meaning navel – the elongated coffee cherries have a distinctive point or indentation at the end. Ombligon is demanding to grow and harvest and requires precise care, which contributes to its limited availability. The variety is valued for its clarity, intensity and complexity , with a typical profile featuring red fruit, floral notes and vibrant acidity.
