Altieri Specialty Coffee is a family run producer based in Boquete, Panama. Their farms sit in the highlands surrounding Volcán Barú, an area shaped by high elevation, cool temperatures and the distinctive microclimates that have made Boquete one of Panama’s most recognised coffee growing regions. This lot is a natural processed Bourbon, a classic variety known for its sweetness, balance and elegant cup character. Grown in the cool conditions of Boquete, the cherries are able to mature gradually, allowing sugars and flavour compounds to develop slowly before reaching their ideal ripeness for harvest. Once picked, the coffee undergoes a natural process, where the cherries are dried with the fruit still surrounding the seed. Throughout this stage, careful drying is important to allow the fruit character and sweetness to develop while maintaining clarity in the final cup. The process adds another layer of expression to the Bourbon variety, bringing together its inherent sweetness with a more generous and fruit driven character.
