Coffee overview It's finally ready, after some frustrating profiling. This is a dynamic cup that pushes and pulls in many directions, from shockingly bright and bitter to velvety soft and sweet. It will change quite a bit over time. Give it plenty of rest! Coffee flavor profile Yuzu, marshmallow, green mango. Acidity: citric, bitter Sweetness: pillowy, sugary Balance: good Finish: lingering, slightly piney Brewing evaluation Rest: 50+ days recommended Filter eval day 10: Gabi Standard Recipe of 1:18 - Cup is finally starting to open up and show some very interesting dynamics. Bitter tart yuzu and pillowy soft marshmallow. Some resinous pine needles adds to the bitterness, especially in the finish. Curious cup. TDS: 1.35 EY: 22.42% We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
