Since starting their specialty coffee journey in 2022, they have faced many challenges but continue refining their processing techniques to improve quality and consistency. Papayo varieties are prized for their rare genetics and incredible flavor potential, featuring distinctive papaya-shaped cherries. Through precise processing methods including being dried with the fruit intact, Zarza unlocks vibrant fruit notes, bright acidity, and a rich, balanced body.
