Region:              Leon Cortez Varietal:             100% Catuai Elevation:          1850 Masl Process:            Black Honey Notes:                Black Cherry, Toasted Marshmallow, Nutmeg Harvest:            July 2026 Roast Level:      Medium Light This Microlot is expected to last for 2-3 weeks.  For 3 generations the Bonilla family has established it's name to be synonymous with precision and quality, winning multiple COE competitions over it's many years of farming.  This farm benefits from cool temperatures, volcanic soil, high altitude and defined wet and dry seasons. Essentially perfect for growing a slow ripening specialty coffee crop  Black Honey Process: Selective harvesting of 100% ripe cherries, locally referred to as "wine-red grapes" due to their deep red coloration at peak maturity. Rested in jute sacks for 3 hours begin the initial fermentation. Subsequently the skin is wet milled and depulped, reserving 100% of the mucilage where the coffee is then put out to dry on raised beds, where during the days it is raked and redistributed to ensure even drying. This type of processing brings a subtle fruity flavor profile distinct from traditional washed but not as intense as fully natural.  Meticulous, labor intensive and perfect conditions yield an excellent crop.
