Description

This Castillo lot was produced by Colombian grower Jairo Arcila in Quindío, a third-generation coffee producer who spent more than 40 years working as a mill manager for one of the country’s largest coffee exporters before retiring in 2019 to focus fully on his own farms. With the support of his sons, Carlos Arcila and Felipe Arcila, Jairo has embraced innovative processing methods and experimental fermentations to produce distinctive specialty coffees. In this lot, ripe Castillo cherries undergo an anaerobic fermentation together with fresh watermelon before the coffee is washed and dried. This co-fermentation process allows the fruit sugars and aromas to interact with the coffee during fermentation, creating a vibrant and expressive cup with pronounced watermelon character, bright acidity, and a juicy, refreshing finish.
