Description
WHAT IS THE FUTURE OF COFFEE: Magnolia is my love letter to espresso. It is our new school espresso that delights in those surprisingly fruity shots with bright and sparkling acidity. It always seeks out sweetness paired with fun floral notes and bright acidity. It is all the best aspects of modern espresso and works to remind me that the possibilities for a good cup are endless when we forever seek coffees that are in bloom. ORIGIN: Yukro is a perpetual Guji favourite on our menu. This year, we have their lot #3 and it brings all those wonderful flowery and citrus forward notes. Originally formed in 1977, the station is now part of the Kata Muduga Union and collects cherries from 579 farms. They employ semi-forest farming systems that mix coffee with false banana trees and maize that ensures high quality without fertilizer or extensive water usage. FLAVOUR: Sourcing coffee for Magnolia is always fun because we try to bring back the same farmers and we have no shortage of fun sweet and floral options in our network. Yukro does not need much of an introduction, given its inclusion in the technnoserve project and ensuring ubiquity on coffee menus. This lot #3 from Yurko opens with wonderful apple aromatics that work perfectly with its bright citrus acidity, which zips from tangerine to lime zest and a robust orange flavour. It quickly shifts towards more cooked fruit notes, think lemon candy or key lime pie before ending on a lush maple syrup, honey and black tea finish. PARAMETERS: For espresso, use a 1:2.2 to 1:2.4 ratio in 32-36 seconds. ROAST DEGREE: Light-Medium. TASTE: Apple Blossom, Orange & Honey. REGION: Wanja Kersa, Jimma, Oromia, Agaro.
