Description

Tasting notes: Juicy and intense. Strawberries on fragrance. Taste of ripe fruit and hints of rum. Diego Baraona grows award-winning coffee among the lush mountain peaks of Usulutan. This coffee batch is fermented with the skin on in barrels without oxygen, which gives it a very special taste. Las Palmas comes from the Los Pirineos coffee farm, located on a plateau of the Tecapo volcano, 1500-1550 meters above sea level in the eastern part of El Salvador. The location of the coffee farm is ideal for coffee cultivation with its volcanic soil, cold climate, optimal rainfall and access to sunlight. Los Pirineos was founded in 1889 and has been run by the Baraona family ever since, with the exception of a period during the Salvadoran Civil War from 1980 to 1992. Los Pirineos grows several bean varieties such as Bourbon Elites, Pacas and Pacamara. They are also part of a project to develop new coffee varieties, so the farm has coffee trees from 1890, as well as trees with natural mutations and hybrids from all over the world. Los Pirineos was one of the first farms in El Salvador to have its own micromill, and they are experimenting with developing and improving processing and drying methods.
